The sous chef proposes

I’m just about the happiest woman in the world! As you can see, Ash proposed, and placed the most beautiful antique ring on my finger.

I know this doesn’t have much to do with cooking, or recipes, but bear with me and I’ll share something edible with you too. But before I do, I must share some photos from our weekend away. 

There was the spa cabin, with a gas log fire and a cute kitchen…

Then the delicious mushroom, potato and herb dish he cooked for dinner on our first night, with a fresh green side salad…

Breakfast proved even further why I should marry the man…

And finally, this is the recipe I’ll share with you. It’s so yummy you’ll have to exercise considerable self-control to stop eating it with a spoon. Ash’s Mum’s peanut satay sauce. Mm-hmm.

Slather it on grilled vegetable kebabs as we did. Use it as an extravagant salad dressing. Thin it out and call it soup. Top steamed vegetables with it like a Pra Ram Long Song. Thicken with extra peanut butter and serve as a dip. Drizzle over a pizza instead of cheese. You name it, it does it, and does it better than you’ve had it done before.

Peanut satay sauce (serves 4)

Ingredients:

  • 2 tbsp peanut butter
  • 2 tbsp sweet chilli sauce
  • 1 tsp chicken flavoured stock
  • 165ml coconut milk
  • A handful of chopped coriander
  • 1/2 long red chilli, chopped

Method:

  1. Mix, with a spoon, in a bowl. Or shake in a jar. Couldn’t be simpler really!

      Haha good, just make sure there are plenty of hungry mouths to feed – it’s so moreish it’s hard to not eat straight with a spoon if there’s any spare :p
